Stories and history

The story of this place

Ristr8to is a small specialty coffee bar at 15/3 Nimmanhaemin Road, at the mouth of Nimman Soi 3, Suthep, Chiang Mai. It was founded in 2011 by Arnon Thitiprasert, a barista who went on to become world latte art champion. It is often counted among the landmarks of Chiang Mai's coffee scene and draws coffee lovers from abroad.

Before the shop, Arnon lived in Australia. Sprudge (2017) says he moved to Sydney to improve his English, worked as a barista and ran his own shop for a few years before returning to Thailand; Malay Mail (2021) says he spent four years in Australia and returned to Chiang Mai in 2011 to open Ristr8to.

Why Chiang Mai? Sprudge says Arnon saw its urban development, artistic community and closeness to northern coffee farms, and wanted a hot-coffee shop in a cooler part of Thailand. On many early days the shop sold only about eight cups; by 2017 each location was selling hundreds a day.

His latte art drew notice from the start. Wikimedia Commons holds late-2011 photos of latte art at Doppio Ristretto in Chiang Mai, captioned as the work of the barista-owner who placed sixth in the 2011 World Latte Art Championship in Maastricht, Netherlands; Sprudge lists Doppio Ristr8to as one of the Ristr8to locations.

Arnon's competition record built the shop's name. Sprudge says he won Thailand's national latte art championship three years running and represented Thailand at the World Latte Art Championship in 2011 (6th), 2015 (5th) and 2016 (11th), before winning the world title in Budapest, Hungary, in 2017.

The name and its number eight have a story. Sprudge says the "8" reflects Arnon's belief that a doppio ristretto should have double the 44 chromosomes of Arabica, so prices include an eight, and at the time the shop opened at 8:08 a.m. and closed at 11:08 p.m.

The menu is serious and playful at once. Sprudge says the signature "Satan Latte" adds an extra ristretto shot to keep the coffee flavour through the milk used for latte art. Malay Mail describes the Cigar8to, a 4-ounce doppio ristretto with steamed milk; the Shakerato from Hell, served in test tubes; the Ethiopian Monkey, a mocha with crème de menthe; the Mexican Latte, created in 2012; and alcoholic drinks such as the Black Martini. There are also drinks inspired by other coffee cities, such as Melbourne's Magic and the Gibraltar, in the "Coffee in Good Spirit" line.

On beans, Malay Mail says the house espresso blend mixes Thai, Colombian and Mexican beans in a 4:3:3 ratio, roasted in house, while Sprudge notes single origins rotating monthly. The latte art is free-poured without picks or tools: five- and seven-layer tulips, reversed tulips, rosettas, swans and phoenixes.

Success brought new branches. BK Magazine describes Ristr8to Lab, between Nimman Sois 3 and 5, a minimal Scandinavian-style space for "cult coffee", with a roasting lab using beans from about 16 countries roasted every Sunday and a Satan Coffee Corner rotating six single origins a week with home-brewing lessons. Sprudge counted three Chiang Mai locations in 2017, and Seth Lui reported in December 2018 that a Ristr8to had opened in the Chef Avenue food court in Tai Seng, Singapore.

COVID-19 hit hard. Manager Online reported on 23 February 2021 that before the pandemic customers queued from the morning and the shop stayed busy into the evening, but with tourists gone sales fell nearly 80 percent. The shop set up a morning table outside selling sticky rice, grilled pork and Sipsongpanna-style chilli dip at 30–50 baht a set to help pay staff.

Today Wongnai lists the shop as open daily 07:00–17:30, with about 11–40 seats, Wi-Fi and roadside parking that is hard to find. A 2024 review describes a dark, warm interior; popular drinks run about 88–128 baht, such as a Flat White at 88 baht and the Satan Latte at about 98–118 baht.
